Firin Kebab – A Turkish Dish which is really just Chicken & Potatoes….

You can make this meal with either chicken or lamb, and it’s quick and easy to make, and goes really well with rice and salad, a typical Mediterranean dish.  If you live in our house, there’s usually a baguette to go with it as well to dip into the sauce, yum!  My youngest son usually pulls a face when I say I’m making this, but three helpings later, I don’t hear anything more!

Ingredients for a family of five:

  • Chicken thighs x 10-12 – I go for the thighs with the skin on as it doesn’t go dry
  • Maris Piper potatoes – enough to go around the entire pot
  • Bayleaf x 2
  • 1 Onion – diced, or a mug of frozen chopped onions
  • Garlic cloves – 2-3 depending on how much you like garlic – finely chopped
  • Salt, pepper, cinnamon and cumin
  • Peeled and chopped tomatoes – 2 x 200g tins
  • Olive Oil – a drizzle
  • Water

  • Put the chopped tomatoes, onions and garlic cloves into the bottom of the baking tray and just mix it together, and then move it all out to the side – like this:

  • Then put your chicken thighs into the middle of the baking tray and move the chopped tomatoes etc onto the chicken thighs

  • Then peel the spuds and put them all around the edge:

  • Then cover all the ingredients with the tomatoes etc

  • Then add in all the herbs and spices, and drizzle over the top some olive oil

  • Then add enough warm water, about half way up the baking tray

  • Then cover with foil, and stick it in the oven on 180 for 1.5 hours, turn the baking tray at least once in that time, and take the foil off and turn the potatoes around
  • After 1.5 hours, take the foil off, and pop it back in the oven so the chicken and potatoes brown
  • In the meantime, make your rice and salad, and then
  • Bob’s your uncle.
